Exploring the Feasibility and Sustainability of Increased Egg Consumption in Rwanda

PI: Sarah McKune
Department of Environmental and Global Health

I have been affiliated with the McKune lab since the fall of 2023, and began work on my current project in the spring of 2024.

The objectives of my research are to examine the feasibility of a policy that would significantly increase maternal egg consumption during pregnancy in Rwanda, and to examine the extent and ways in which Rwanda is positioned to support sustainable egg production as a tool to reduce malnutrition. I will be examining the data from an environmental, social, and global public health standpoint.

My responsibilities for this project include reviewing relevant literature and policy, as well as formulating a conversational interview and focus group questions. As a part of my research, I will be traveling to Rwanda to hold interviews and gather information from various stakeholders and involved parties. I will be meeting with mothers, government officials, suppliers, and various other relevant groups in order to gather information from perspectives across the board. Once these interviews are conducted, I will be compiling this information with my literature findings.
